Drop biscuits are, to me, the easiest of biscuits to make. They work well with your everyday All-purpose flour and just regular milk, and are easily modifiable to a wide variety of flavor profiles. Don’t like old bay? Use Zatarain’s. Try it with gruyere and herbs de provence or provolone and your favorite italian seasoning. Do note, that if you switch to an unsalted herb/spice blend, you will want to add a bit more salt to the recipe. You can make them in your stand mixer or just in a bowl with a wooden spoon. Scoped with a disher or dropped with 2 spoons, they come together quickly and easily onto the tray and into the oven. Great served straight up, with some butter or pepper jelly, or in your soup!
