Pimento Cheese

I don’t know if there is anything I can say about pimento cheese that hasn’t been said by a thousand other people and contradicted by two thousand more. I make no claim that this is the best ever recipe and it definitely isn’t famous. What I would say is that I find it to be a great base recipe and method that is highly, and easily modifiable. Use whatever blend of cheese you like; all sharp, all mild, white cheddar, gouda, jack, etc. If you want it more spreadable (great for sandwich use) add a bit more mayonnaise. If you want it spicy, up the hot sauce or use hot peppers instead of the pimentos/roasted peppers. Make it your own, just please, please, please don’t make it with cream cheese.
